    The average Japanese consumer eats 5.8 kilograms of mushrooms annually. Compared to 1.65 kg for the average American. The Netherlands sits in the middle, at 3 kilograms.

    We expect, as a bare minimum baseline, that the American and European markets will reach levels of consumption similar to Japan’s over the next 10~20 years, with exotic varieties accounting for most of that growth. For the U.S., this means 300% growth in demand and anywhere from 100~200% growth in Europe. Grower's need to be ready to meet that rising market or be left out.

    Labor savings in excess of 90%

    Mechanized Japanese lines allow for the rapid bag/bottle filling, followed by sterilization and inoculation, with a fraction of the labor required for primarily manual farms. 

    There's simply no reason to fill tens of thousands
    of bags by hand any more, or inoculate each
    block by hand. This is also not economically
    feasible either. At SALAI International Japan we
    work with growers to find the right mixture of
    automation for their farm and their situation.
